If you ask me, they'll make a great coleslaw recipe with good knife knowledge and a short list of easy-to-find ingredients. Both ingredients and the cabbage cut are equally important. If cabbage is cut into strips that are too wide, the coleslaw ends up clumsily, heavily and discouragingly on the fork. If the pieces are too long, the cheeks get dirty with cabbage sticks soaked in dressing – awkward and untidy. I like chopping my cabbage into ribbons that are as thin as possible, at most half a pencil wide. The cabbage becomes light as a feather and yet every bite maintains the perfect amount of coleslaw crunch.
Inspiration for this coleslaw
When Wayne and I visited Mexico City, I discovered a simple snack that quickly became a favorite – salt-kissed peanuts that tasted like they were sprinkled with lime. I made this coleslaw with these flavors the other night. It is based on the peanut salad that I included in Super Natural Cooking and is a delicious (and colorful) alternative to more typical mayo-based coleslaw. I managed to match fajitas, but I suspect it would be a welcome addition to potluck, BBQ, summer party, or picnic – tacos, burgers, or whatever you planned for this vacation weekend.
Ingredients & variations
I bought my tomatoes directly from farmers. If tomatoes are not your thing right now, I would replace chopped avocado and red onions. Or now that I think about it – apple schnitzel or apple slices or jicama. Other ideas: Roasted cherry tomatoes instead of fresh ones – would take longer, but add a completely different flavor profile.
You can easily make this a creamier coleslaw by adding a drop of your favorite mayo or yogurt after tossing the ingredients for the first time – before adding the peanuts. It is one of those things that is about personal preference. Sometimes a hint of creamy is perfect, but some people really like it! I mean, I definitely had conversations with people who were convinced that a good coleslaw is just as much about mayo as it is about cabbage.
